- 1 cup fresh raspberries
- 2 tablespoons sugar
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 1 cup crushed graham crackers
- 3 tablespoons melted butter
- Fresh mint leaves for garnish (optional)
Instructions
- Start by washing the raspberries thoroughly under cold running water.
- Toss the raspberries with 2 tablespoons of sugar and allow to sit for about 10-15 minutes.
- Add 1 cup of mascarpone cheese to a bowl.
- Whip the heavy cream until soft peaks form, about 2-3 minutes.
- Fold the whipped cream into the mascarpone cheese with 1 teaspoon of vanilla extract.
- Mix 1 cup of crushed graham crackers with 3 tablespoons of melted butter in a small bowl.
- Take clear glasses and start with a layer of the graham cracker mixture.
- Add a layer of mascarpone cream on top of the crust layer.
- Follow with a layer of the macerated raspberries.
- Repeat the layers until the glasses are filled, finishing with raspberries on top.
- Chill the glasses in the refrigerator for at least 60 minutes.
- Garnish with fresh mint leaves before serving.

Use fresh ingredients for the best flavor. Avoid freezing as it may affect the texture of the cream and raspberries.
