A simple yet delicious dessert that combines mascarpone cheese and fresh raspberries, perfect for summer gatherings.


Ingredients

  • 1 cup fresh raspberries
  • 2 tablespoons sugar
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup crushed graham crackers
  • 3 tablespoons melted butter
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Start by washing the raspberries thoroughly under cold running water.
  2. Toss the raspberries with 2 tablespoons of sugar and allow to sit for about 10-15 minutes.
  3. Add 1 cup of mascarpone cheese to a bowl.
  4. Whip the heavy cream until soft peaks form, about 2-3 minutes.
  5. Fold the whipped cream into the mascarpone cheese with 1 teaspoon of vanilla extract.
  6. Mix 1 cup of crushed graham crackers with 3 tablespoons of melted butter in a small bowl.
  7. Take clear glasses and start with a layer of the graham cracker mixture.
  8. Add a layer of mascarpone cream on top of the crust layer.
  9. Follow with a layer of the macerated raspberries.
  10. Repeat the layers until the glasses are filled, finishing with raspberries on top.
  11. Chill the glasses in the refrigerator for at least 60 minutes.
  12. Garnish with fresh mint leaves before serving.

Notes

Use fresh ingredients for the best flavor. Avoid freezing as it may affect the texture of the cream and raspberries.
