Description

  • 2 cloves garlic, minced

  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning (optional)
  • 1 cup cooked rice or quinoa
  • Fresh herbs for garnish (such as parsley or cilantro)

Instructions

  1. Start by washing and chopping your vegetables into bite-sized pieces.
  2. Heat a large skillet or frying pan over medium heat with 1 tablespoon of olive oil.
  3. Add the protein to the pan. If using chicken, cook each side for about 5-7 minutes, or until cooked through.
  4. Once the protein is cooked, add the minced garlic to the pan and stir for about 30 seconds.
  5. Then, add your chopped vegetables to the skillet and stir together.
  6. Sprinkle in salt, black pepper, and Italian seasoning, and cook for another 5-7 minutes until the vegetables are tender but still crisp.
  7. Add the cooked rice or quinoa to the skillet and stir to combine.
  8. Allow the mixture to cook for an additional 2-3 minutes on low heat.
  9. Remove from heat and sprinkle fresh herbs on top before serving.
