- 1/4 cup Ketchup (low-sugar)
- 1 tbsp Mustard (Dijon for a twist)
- 1 tbsp Cajun Seasoning (adjust to taste)
- 1 cup Pickles (or cucumbers)
- 2 cups Lettuce (any mix of leafy greens)
Instructions
- Prepare the Potatoes: Wash and peel the red potatoes, cutting them into small cubes for quicker cooking. Boil a pot of water and cook for about 15-20 minutes until fork-tender. Drain and set aside.
- Cook the Ground Meat: In a large skillet, heat a tablespoon of oil over medium heat, add the ground beef, and cook until browned, about 7-10 minutes. Sprinkle Cajun seasoning and adjust to taste.
- Caramelize the Onion: Heat oil in another pan, add diced onion, and cook until soft and golden, about 15 minutes.
- Prepare the Sauce: In a small bowl, mix mayo, ketchup, and mustard until well blended.
- Assemble the Bowl: Start with a base of lettuce, then add the cooked potatoes, ground meat, caramelized onions, and shredded cheese. Top with pickles or cucumbers.
- Finish the Bowl: Drizzle the sauce mix over everything and serve immediately while warm.
