Description

A quick and easy meal featuring salmon glazed with sweet and tangy maple dijon, roasted with baby potatoes and asparagus for a complete dish.


Ingredients

  • 1 lb baby potatoes, cut in half
  • 1 Tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tsp fresh thyme
  • Salt and pepper, to taste
  • 1 lb thin to medium asparagus, ends trimmed
  • 2 tsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp lemon zest
  • Salt and pepper, to taste
  • 4 (6 oz) salmon fillets, fresh or frozen, thawed
  • 3 Tbsp whole grain Dijon mustard
  • 3 Tbsp maple syrup (or honey)
  • 2 cloves garlic, minced
  • 1 Tbsp lemon juice
  • 1 tsp fresh thyme
  • 1/4 tsp paprika
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Combine the halved baby potatoes with olive oil, minced garlic, and fresh thyme. Season with salt and pepper, then toss well.
  3. Spread the potatoes in a single layer on a large sheet pan sprayed with nonstick spray.
  4. Roast the potatoes in the oven for about 20 to 25 minutes until tender.
  5. Toss the trimmed asparagus with olive oil, minced garlic, lemon zest, and salt and pepper, then set aside.
  6. Whisk together the whole grain Dijon mustard, maple syrup (or honey), minced garlic, lemon juice, fresh thyme, and paprika to make the glaze.
  7. After the potatoes have roasted for 20-25 minutes, push them to one side of the pan, and add the asparagus to the empty side. Place the salmon fillets in the center.
  8. Brush the tops of the salmon with the maple dijon glaze, then season with salt and pepper.
  9. Return the sheet pan to the oven and cook for an additional 15 minutes until the asparagus is fork-tender and the salmon is cooked through.
  10. Remove the pan from the oven, sprinkle with fresh parsley and additional salt and pepper if desired, then serve hot.

Notes

For extra flavor, consider serving with lemon wedges or a simple green salad. Store leftovers in an airtight container in the fridge for up to 3 days.
