Quick and tasty Spinach and Feta Quesadillas that are easy to make and packed with flavor.
Ingredients

- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 4 large tortillas
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Optional: diced tomatoes, olives, or herbs
Instructions
- Heat olive oil in a skillet over medium heat.
- Sauté spinach until wilted, about 2 to 3 minutes.
- Mix wilted spinach with crumbled feta, salt, and pepper.
- Prepare a tortilla in the skillet, spreading spinach-feta mixture on one half.
- Fold the tortilla over the filling and cook until golden brown, about 2-3 minutes on each side.
- Repeat with remaining tortillas.
- Slice cooked quesadillas into wedges and serve warm.
Notes
Serve with salsa, guacamole, or a light salad. Customize with additional toppings if desired.
