Description

Quick and tasty Spinach and Feta Quesadillas that are easy to make and packed with flavor.


Ingredients

  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 4 large tortillas
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Optional: diced tomatoes, olives, or herbs

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté spinach until wilted, about 2 to 3 minutes.
  3. Mix wilted spinach with crumbled feta, salt, and pepper.
  4. Prepare a tortilla in the skillet, spreading spinach-feta mixture on one half.
  5. Fold the tortilla over the filling and cook until golden brown, about 2-3 minutes on each side.
  6. Repeat with remaining tortillas.
  7. Slice cooked quesadillas into wedges and serve warm.

Notes

Serve with salsa, guacamole, or a light salad. Customize with additional toppings if desired.
