4 large eggs

1/2 cup whole milk

1/2 cup sour cream

1 cup fresh strawberry puree (reduced)

1 cup unsalted butter, softened (for frosting)

8 oz mascarpone cheese, cold

3 1/2 cups powdered sugar

1 tsp vanilla extract (for frosting)

Pinch of salt

Fresh strawberries for garnish


Instructions

1. Preheat oven to 350°F (175°C) and grease and line two 8-inch round cake pans.

2. In a bowl, whisk together flour, baking powder, and salt.

3. In a large bowl, beat butter and sugar until light and fluffy.

4. Add eggs one at a time, mixing well after each addition, then mix in vanilla.

5. Stir in strawberry puree, milk, and sour cream until combined.

6. Gradually add dry ingredients to wet mixture and mix until just incorporated.

7. Divide batter evenly between pans and bake for 25–30 minutes, or until a toothpick inserted comes out clean.

8. Cool cakes completely before frosting.

9. For the buttercream, beat butter until creamy, then add mascarpone and mix gently until smooth.

10. Gradually add powdered sugar, vanilla, and salt; beat until light and fluffy.

11. Frost and layer the cake, then decorate with fresh strawberries. Chill 30 minutes before slicing.

Notes

Reduce strawberry puree on the stovetop for concentrated flavor before measuring.

Keep mascarpone cold before mixing to prevent a runny frosting.

Store cake refrigerated due to mascarpone; bring to room temperature before serving.

For extra flavor, brush cake layers lightly with strawberry syrup before frosting.
