Ingredients

  • 1/2 teaspoon salt
  • 1/2 cup warm milk
  • 1/4 cup unsalted butter, softened

  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped
  • 1 tablespoon cornstarch (optional)
  • 1/4 cup powdered sugar
  • 12 tablespoons milk (for glaze)

Instructions

  1. Prepare the yeast mixture by combining warm milk, 2 tablespoons of granulated sugar, and active dry yeast; let sit until frothy.
  2. Mix the dry ingredients in a bowl, whisking together flour and salt.
  3. Combine the yeast mixture with the flour mixture, adding softened butter, egg, and vanilla; mix until a dough forms.
  4. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
  5. Let the dough rise in a greased bowl, covered, for 1 hour until doubled in size.
  6. Prepare the cheesecake filling by mixing cream cheese, 1/4 cup sugar, and vanilla until smooth; fold in strawberries and cornstarch if desired.
  7. Shape the rolls by rolling out the dough into a rectangle and spreading the filling on it.
  8. Roll the dough into a log shape and cut into 8-10 slices.
  9. Second rise for 30 minutes, covered.
  10. Preheat the oven to 350°F (175°C).
  11. Bake for 20-25 minutes until golden brown.
  12. Prepare the glaze by whisking powdered sugar with milk until smooth.
  13. Finish the rolls by drizzling the glaze over them before serving.

Use fresh strawberries for best flavor, and check yeast freshness before use.
