  • 2 cups all-purpose flour

  • 1 cup coffee (cooled)
  • 1 cup mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 tablespoon cocoa powder (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream the butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Combine the flour, baking powder, and salt in a separate bowl.
  5. Mix the dry ingredients into the wet mixture gradually until just combined.
  6. Add the cooled coffee, mixing gently.
  7. Shape tablespoon-sized dough onto a lined baking sheet.
  8. Bake for 10-12 minutes or until the edges are golden brown.
  9. Cool the cookies on a wire rack.
  10. Make the frosting by mixing mascarpone cheese and powdered sugar until smooth.
  11. Frost each cooled cookie generously with the mascarpone mixture.
  12. Dust with cocoa powder before serving.
