Instructions
- Preheat the oven to 350°F (175°C).
- Cream the butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Combine the flour, baking powder, and salt in a separate bowl.
- Mix the dry ingredients into the wet mixture gradually until just combined.
- Add the cooled coffee, mixing gently.
- Shape tablespoon-sized dough onto a lined baking sheet.
- Bake for 10-12 minutes or until the edges are golden brown.
- Cool the cookies on a wire rack.
- Make the frosting by mixing mascarpone cheese and powdered sugar until smooth.
- Frost each cooled cookie generously with the mascarpone mixture.
- Dust with cocoa powder before serving.
