Instructions
- Combine the chia seeds, almond milk, vanilla extract, and optional maple syrup or honey in a medium-sized bowl.
- Whisk everything together thoroughly and ensure chia seeds are evenly distributed.
- Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
- Stir the mixture after 30 minutes to break up any clumps.
- Prepare the raspberry layer by mashing or blending raspberries.
- Assemble in serving glasses by layering chia pudding and raspberry mixture.
- Garnish with fresh raspberries and mint leaves if desired.
- Serve chilled as a refreshing meal or dessert.
