Ingredients

  • 12 teaspoons maple syrup or honey (optional)
  • ½ cup fresh or frozen raspberries
  • Fresh raspberries and mint leaves for garnish (optional)

Instructions

  1. Combine the chia seeds, almond milk, vanilla extract, and optional maple syrup or honey in a medium-sized bowl.
  2. Whisk everything together thoroughly and ensure chia seeds are evenly distributed.
  3. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  4. Stir the mixture after 30 minutes to break up any clumps.
  5. Prepare the raspberry layer by mashing or blending raspberries.
  6. Assemble in serving glasses by layering chia pudding and raspberry mixture.
  7. Garnish with fresh raspberries and mint leaves if desired.
