Ingredients

  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 4 large eggs
  • 1 cup white chocolate, melted and cooled
  • 1 teaspoon vanilla extract

  • ½ cup ground almonds (almond flour)
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup fresh raspberries (plus extra for decoration)
  • Powdered sugar for dusting
  • Optional: Almond slivers for decoration

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare two 9-inch cake pans by greasing and flouring them.
  2. Cream the softened butter and granulated sugar in a large bowl until light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, mixing well after each. Pour in the melted white chocolate, vanilla extract, and almond extract, mixing until combined.
  4. Combine the flour, ground almonds, baking powder, and salt in a separate bowl.
  5. Mix the dry ingredients into the wet mixture until just combined, then gently fold in the fresh raspberries.
  6. Pour the batter evenly into the prepared pans and bake for 25-30 minutes, until a toothpick comes out clean.
  7. Cool the cakes in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
  8. Prepare a white chocolate ganache or cream cheese frosting while the cakes cool.
  9. Assemble the cake by layering frosting and fresh raspberries between the layers, then frost the outside.
  10. Decorate with powdered sugar, almond slivers, and additional raspberries.
  11. Let the cake sit for 30 minutes before slicing.
