Delicious chicken empanadas that are easy to make and perfect for any occasion.
Ingredients

- 1 pound of chicken breast, cooked and shredded
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1 package of empanada dough or homemade dough
- 1 egg, beaten (for egg wash)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper. Sauté until they soften, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the cooked and shredded chicken to the skillet. Mix well and season with cumin, paprika, salt, and pepper. Cook until everything is heated through, about 2-3 minutes. Remove from heat and let the filling cool slightly.
- Thaw the dough if using packaged dough, or prepare your own dough in advance. Roll it out on a lightly floured surface to about 1/8-inch thickness. Cut out circles from the dough using a round cutter (about 4-5 inches in diameter).
- Place about 1-2 tablespoons of the chicken filling in the center of each dough circle.
- Fold the dough over to form a half-moon shape. Press the edges tightly to seal, crimping edges with a fork for a decorative touch.
- Preheat your oven to 375°F (190°C) if baking. If frying, heat oil in a deep pan to 350°F (175°C).
- Arrange the filled empanadas on a baking sheet lined with parchment paper and brush the tops lightly with the beaten egg.
- Bake for 20-25 minutes, or until golden brown, or fry for 3-4 minutes on each side until golden brown. Drain on paper towels.
Notes
Serve warm with dipping sauces like salsa or guacamole. Leftovers can be stored in an airtight container for up to three days.
