Delightful bars combining classic oatmeal cookie flavors with a sweet glaze, perfect for gatherings or a quick snack.


Ingredients

  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 12 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×9 inch baking pan.
  3. Cream together the softened butter, brown sugar, and granulated sugar.
  4. Beat in the egg and 1 teaspoon of vanilla extract.
  5. Combine dry ingredients in another bowl.
  6. Gradually add dry ingredients to the wet mixture.
  7. Spread the batter evenly in the prepared pan.
  8. Bake for 20-25 minutes.
  9. Allow to cool.
  10. Mix the glaze.
  11. Drizzle the glaze over the cooled bars.
  12. Cut and serve.

Notes

For best results, let the bars cool completely before glazing. Store in an airtight container for 3-5 days at room temperature.
