- 1/2 cup butter (softened)
- 3/4 cup brown sugar (packed)
- 2 tbsp granulated sugar
- 1 large egg (at room temperature)
- 2 tsp vanilla extract
- 1 & 1/4 cup flour
- 1/2 cup Dutch processed cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup semi-sweet chocolate chips
- 3 tbsp butter (softened, unsalted)
- 4 oz cream cheese (softened)
- 1/4 tsp mint extract
- 1/2 cup powdered sugar
- 1/3 cup semi-sweet chocolate chips (melted)
- 3 tbsp heavy cream
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until smooth.
- Prepare the dry ingredients by whisking together the flour, cocoa powder, baking soda, and salt in a separate bowl.
- Gradually add the dry mixture into the wet ingredients, stirring just until combined.
- Fold in the chocolate chips gently with a spatula.
- Shape the cookies by dropping dough balls onto the sheet, leaving space in between.
- Bake for about 10 minutes, or until soft in the center.
- Cool on the baking sheet for about 10 minutes before transferring to a cooling rack.
- Make the mint frosting by creaming together softened butter and cream cheese, then mixing in mint extract and powdered sugar.
- Prepare the ganache by melting chocolate chips and mixing with heavy cream.
- Assemble the cookies by spreading frosting on each, then drizzling ganache on top.
Notes
For added flair, sprinkle crushed peppermint candies on top of ganache immediately after drizzling.
