Description

Delightful cookies combining rich chocolate flavor with refreshing mint, perfect for any occasion.


Ingredients

  • 1/2 cup butter (softened)
  • 3/4 cup brown sugar (packed)
  • 2 tbsp granulated sugar
  • 1 large egg (at room temperature)
  • 2 tsp vanilla extract
  • 1 & 1/4 cup flour
  • 1/2 cup Dutch processed cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup semi-sweet chocolate chips
  • 3 tbsp butter (softened, unsalted)
  • 4 oz cream cheese (softened)
  • 1/4 tsp mint extract
  • 1/2 cup powdered sugar
  • 1/3 cup semi-sweet chocolate chips (melted)
  • 3 tbsp heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until smooth.
  4. Prepare the dry ingredients by whisking together the flour, cocoa powder, baking soda, and salt in a separate bowl.
  5. Gradually add the dry mixture into the wet ingredients, stirring just until combined.
  6. Fold in the chocolate chips gently with a spatula.
  7. Shape the cookies by dropping dough balls onto the sheet, leaving space in between.
  8. Bake for about 10 minutes, or until soft in the center.
  9. Cool on the baking sheet for about 10 minutes before transferring to a cooling rack.
  10. Make the mint frosting by creaming together softened butter and cream cheese, then mixing in mint extract and powdered sugar.
  11. Prepare the ganache by melting chocolate chips and mixing with heavy cream.
  12. Assemble the cookies by spreading frosting on each, then drizzling ganache on top.

Notes

For added flair, sprinkle crushed peppermint candies on top of ganache immediately after drizzling.
